Abstract:
As one of the biocatalyst, enzyme have excellent properties ot high selectivity ana specificity, activity, reaction conditions are moderate, many countries have paid great attention for a long time. In this paper, the structure, preparation, evaluation, and application in food industry of microencapsulation in enzymic preparation were summarized, and the long term potential development of enzymic preparation microencapsulation was prospected.[著者文摘]
