湿冷技术是一项可以提供高湿低温贮藏环境的保鲜新技术。该技术适合于果蔬的预冷,也适合于果蔬的贮运、贮藏和保鲜。具有提高冷藏果蔬品质、降低冷库运行费用和平衡电网负荷等优点,因此推广该技术有广阔的前景。本文重点分析了湿冷技术特点、在果蔬保鲜中应用现状及前景展望。[著者文摘]
