摘 要:
分析了米渣中蛋白质及相应氨基酸种类和含量,其谷氨酸、亮氨酸、天门冬氨酸和精氨酸含量远高于其它植物性蛋白。采用诺维信耐高温蛋白酶Alcalase 2.4L酶解米渣蛋白最佳工艺条件为酶解温度40℃、时间4h、pH7、固液比1:5。米渣蛋白酶解后得到的多肽和糊精做为壁材进行微胶囊化,微囊化均质压力40MPa,进风和出风温度分别为190℃、90℃,糊精和米渣蛋白氨基酸的比例在1:3时包埋效果最佳,微胶囊化产品有良好的水溶性和乳化性。[著者文摘]

Research on the Technology for Enzymolysis of Rice Dregs Albumen and is Product as Microencapsulated Wall Material
Abstract:
The protein in rice dregs, and kinds and content of the corresponding amino acid were analyzed, which showed that the contents of its glutamic acid, leucine, asparagic acid and arginine were higher than those of other textured vegetable protein. 2.4 L Novo Alcalase was used to enzymolysis of rice dregs, and the enzymolysis temperature 40℃, time 4 h, pH 7 and solid liquid ratio 1;5 were optimum for process. The polypeptide and dextrin after enzymolysis of rice dregs albumen were taken as wall material for microencapsulating, homogeneous pressure for microencapsulation 40 MPa, inlet and outlet air temperature 190℃ and 90℃ respectively, and the 1:3 ratio of dextrin and rice dregs albumen amino acid was optimum for embedding effect, and the microencapsulated product has good water solubility and emulsibility.[著者文摘]
