长期以来,浓香型白酒一直占据着白酒消费的主流市场。浓香型白酒“浓郁”与“淡雅”两大流派分流日趋明朗。从影响白酒风格的环境、原料、设备、工艺入手,围绕“浓郁”与“淡雅”两大流派在生产工艺和产品风格上的特点与差异研究白酒产品的创新方向。未来白酒发展必将遵循“师法自然’’的规律,形成多香型、多流派、多风格、多特色和谐共生的全新格局。[著者文摘]

Abstract:
Luzhou-flavor liquor has always been the liquor consumption focus for a long time. It is classified into "elegant" Luzhou-flavor liquor and "mellow" Luzhou-flavor liquor according to its taste. The difference in production techniques and liquor styles of both the two types were discussed in this paper. The development of Luzhou-flavor liquor in the future will surely follow the rules of "natural development" and form a brand new pattern of multiple flavor types, multiple liquor styles, and multiple characteristics but coexistence of liquor product in harmony.
