Preparation, function and application of D-sorbitol in food industry

Abstract:
D-sorbitol, hydrogenated from glucose, is a carbohydrate derivative only containing hydroxyl function groups. It is not only extensively used in medicine and chemical engineering, but also in food industry as food additive.
