摘 要:
研究了杜英叶红色素粗提物与纯提物的稳定性,结果表明,该色素粗提物的光耐受性、耐热性比纯化色素好,60℃加热4h,杜英叶红色素保存率超过91%。色素粗提物中的糖、酸、多酚物质等可能与色素发生辅色效应而使稳定性大大提高。[著者文摘]

Stability comparison of the crude and the pure pigment from Elaeocarpus sylvestris

Abstract:
The stability of the crude and the pure pigment extraction from Elaeocarpus sylvestris Lour Doir was studied. The results showed that the crude pigment was more stable than the pure pigment in the tolerance of thermal and light. It may be due to intermolecular co-pigmentation which occurred by carbohydrate, acid, polyphenol react with pigments.[著者文摘]
