摘 要:
酶联免疫吸附是将抗原抗体反应的高度特异性和酶的高效催化作用相结合发展建立的一种免疫分析技术。文中主要从农药残留、兽药残留、违禁药物、转基因食品、病原微生物、生物毒素以及其他成分等几方面,对该技术在食品安全检测中的应用进行了综述,并提出了存在的问题以及相应的解决办法。[著者文摘]

Application of ELISA technology on food safety detection

Abstract:
Enzyme-Linked Immunosorbent Assay （ELISA）is an immunoassay technology established on the combination of the highly specific antigen-antibody reaction and the efficient catalysis of enzyme. In this paper, the application of ELISA on food safety detection is reviewed, including pesticide residue, animal drug residue, forbidden drugs, genetically modified foods, pathogenic microorganisms, biotoxin and others, and the existed problems and corresponding methods to solution are proposed.[著者文摘]
