摘 要:
本试验对山西老陈醋使用的红心大曲中红曲霉进行分离鉴定,从山西老陈醋专用红心大曲中共分离到8株红曲霉,经固体平板培养特征、显微镜镜检个体特征、以及生物学特性和生化试验等,确定其为红曲霉属(Monascus)中的两个种即红色红曲霉(Monascus ruber)和紫色红曲霉(Monascus purpureus).[著者文摘]

This experiment isolated and identified Monascus from Super-mature-vinegar Daqu I isolated 8 strains Monascus from Super-mature-vinegar Daqu with red core, after culturing by solid plate, observing by microscope and biological and chemical test , and determined them belong to Monascus, ie.
