摘 要:
绿芦笋(Asparagus officinalis L.cv jersey Giant)是一种营养丰富,并具有一定药用价值的名贵蔬菜,特别对癌症的防治有较好的功效。由于绿芦笋嫩茎含水量较高,呼吸作用强,采收后不耐贮藏,因而给鲜销带来很多麻烦。试验采取2种典型保鲜剂(壳聚糖和6-BA)对绿芦笋进行后处理,并定期检测样品的失质量率、VC含量、叶绿素含量、可溶性固形畅含量和纤维素5个指标。实验结果证明,这2种保鲜剂不仅都能很大程度地延长绿芦笋的贮藏时间,而且还有各自的特性,在选择短期或长期芦笋储运时可提供不同的选择。[著者文摘]

Abstract:
The green asparagus is one kind of rich nutritional and high medical value vegetables. It is effective to prevent and cure the cancer especially. Because of higher moisture contention and the strong respiration, it is difficult to store for a long time. Two critical antistaling agents were used to prolong the shelf life of green asparagus. Weightlessness loss rate, VC content, chlorophyll content, soluble solid content and cellulose were tested every two days. It was indicated that using the two antistaling agents can obviously extend the shelf life of green asparagus. And each antistaling agent has its own characteristic properties, therefore providing different choice during the period of the short-term or long-term store and transportation.[著者文摘]
