乳酸菌耐酸机理的研究

摘 要:
为研究乳酸菌的耐酸机理,对4株乳酸菌株在人工胃液中的生存率及葡萄糖的影响作了分析,当葡萄糖存在时,耐酸菌株的生存率大大提高;培养24h后,耐酸菌株的生物量大于非耐酸菌株,菌液的pH值低,非耐性菌株在酸性培养基的生长情况较差;耐酸菌株能够消耗人工胃液中的葡萄糖并使悬浊液的pH值升高;耐酸菌株的ATP酶活性小于非耐酸菌株。以上的结果可以看出,耐酸菌株在酸性环境中可以较好的生长,并具有可以在强酸性条件下利用碳源(如葡萄糖)进行代谢的耐酸机理,而ATP酶活性不是影响耐酸性的主要因素。[著者文摘]

Abstract:
In this paper, viabilities in simulated gastric juice and glucose's effect about four lactic acid bacteria strains were observed. Acid-resistant strains have strong viabilities in simulated gastric juice and viabilities were increased in absence of glucose. Growth of acid-resistant strains were better than other strains, culture medium's pH were lower than other strains after 24 hours incubation in GYP liquid medium and they have conform growth curve in three types GYP mediums (pH3.8,4.5 and 6.8).H^+-ATPase activities of strains were measured : acid-resistant strains' H^+-ATPase activities were higher than other strains.pH and consumption of glucose during the incubation in the simulated gastric juice were measured:acid-resistant strains can consume glucose. From the result of experiment, we know that acid-resistant strains can grow well in acid condition, and have acid-resistant mechanism thai they can use carbon fountain such as glucose for metabolism in acid condition.[著者文摘]
